In addition to Sonic Colors Ultimate and unnamed new game that's coming out next year (which is presumed to be called "Sonic Rangers"), there's also a new collection game that's been announced:

By the looks of things, these may actually be the 2011/2013 Stealth/Taxman remakes. I say this, because aside from end of the trailer playing the same sound effect as the one heard in those versions, the games have also been shown to have widescreen display, along with Sonic's shoes having the white stripe on them while bouncing on a spring in Sonic 1 (which was not the case in the Genesis original, and was corrected in the 2013 remake).
In regards to Sonic 3 & Knuckles, however... While they did show an emulated version in the trailer, it's been hinted that this does not represent the final product. There was a Sega representative on Twitter who confirmed that it will have widescreen like the other three games. Plus, it should also be taken into account that Stealth and/or Taxman started on a proof-of-concept (https://www.youtube.com/watch?v=Ct1cErthI6s) Sonic 3 & Knuckles remake about seven years ago, almost, which may have finally gotten a greenlight.

I'm not overly impressed, but it looks okay so far. Hopefully, this'll finally break the trend of only Sonic being playable. With few exceptions, they've been doing that since Secret Rings (not counting its "Party Mode"), which came out all the way back in 2007, and I'm beyond sick of it at this point.

sega's been overly secretive on sonic 3's inclusion on origins as we have little-to-no footage of it that i know of, that tells me the jacko/buxer tracks have been nixed and most likely replaced by their SKC counterparts, which according to the 11/3/93 sonic 3 prototype were the original tracks
https://tcrf.net/Proto:Sonic_the_Hedgehog_3
point is when sega sees legal issues holding games back from a re-release, they either rip out or modify the concerning content out or avoid a re-release altogether
sega doesn't like blowing money on royalties except when absolutely necessary
they supposedly can't re-release the sonic advance trilogy outside of japan, because when THQ went under, they literally took the publishing rights to its grave

Yeah, I think you've hit the nail right on the head. In fact, it's been pretty much confirmed (https://twitter.com/NoahNCopeland/status/1535011136659152906), or at least heavily implied, that the Michael Jackson/Brad Buxer tracks have been replaced. I already halfway expected this would happen from the beginning.
While I don't outright hate the prototype/Sonic & Knuckles Collection tracks, I still prefer the Genesis tracks, and I feel as if things just won't be the same without the latter, since that's what I grew up with. Ah, well. I guess this is what mods are for.

we actually have official confirmation
https://twitter.com/TailsChannel/status/1535011473218494487
senoue will be taking the originally intended (what SKC used) tracks from his own tape archive of all the music he's done and finalize them for origins natively on the genesis' sound hardware
with the actual hardware in hand this time, he'll surely pull it off better than what he was able to do for sonic 4
-
...feels like i was dead wrong, the compositions we got of the SKC tracks for origins are direct downgrades from the 11/93 prototype iterations
now i know that senoue pretty much hasn't chiptuned on the genesis for ~26 years and jacko+buxer's shoes were pretty big to fill, but goddamn
that and there's now a new super sonic theme that doesn't sound like it belongs in sonic 3 at all, why the sonic 1-2 percussion?
